I totally get your struggle! I’ve been experimenting with medium roast whole beans too, and I’ve found that the grind size plays a huge role in how your coffee turns out. For a pour-over, a medium grind is best—think the texture of sea salt. If your coffee is too bitter, you might be grinding too fine or using water that’s too hot. Try aiming for around 200°F for your water temperature. Also, make sure you’re measuring your coffee properly! I usually go with about 1:15 ratio of coffee to water, but I tweak it depending on my mood. The beans really shine when brewed with care, and I find that using a V60 pour-over method highlights those subtle flavors best!
